With more than 16 countries having access to its waters, the Mediterranean Sea is an interconnected network of different cultures, cuisines and histories, and as such, it’s impossible to pinpoint an exact definition of “Mediterranean cuisine.” The wealth and somewhat uniformity of this style of cuisine is due to the variety of ethnicities and cultures coming together on its great water, as well as similar climatic conditions (hot, dry summers and cool, short winters) producing similar harvests throughout the different countries.
The Mediterranean acts as a gateway – over the centuries, the different ingredients, cooking techniques, and dishes have influenced each other. Strong similarities are seen through the high consumption of fruits, vegetables (tomatoes, broccoli, peppers, capers, spinach, eggplant), cereals, and legumes (lentils, chick peas, white beans). Dishes are low in saturated fats, yet high in monounsaturated fats such as olive oil, nuts, and avocados – olive oil is used in practically every dish!
